Ham, Cheese & Mushroom Quiche Recipe

Quiche is what we make in our house when we are feeling lazy but still want a home cooked meal and have lots of ingredients in the fridge. It’s impressive appearance belies it’s simplicity and you can have it in the oven in less than ten minutes if you use a store bought pie crust. Once you have the basic formula down you can improvise with whatever ingredients you have on hand.

Ham, Cheese & Mushroom Quiche

Cook time: 
  • store bought (or homemade) piecrust
  • 3 eggs
  • 1½ cups whole milk or cream
  • ¾ tsp salt
  • pinch of nutmeg
  • black pepper to taste
  • ⅓ cup diced ham
  • 1 cup spinach
  • ½ cup assorted cheese (mozzarella, cheddar, Parmesan)
  • ½ cup mushrooms
  • 1 tbsp butter
  1. Heat oven to 425 degrees.
  2. Heat the butter in a pan. Saute mushrooms and spinach to soften for a few minutes. Allow to cool.
  3. Mix the rest of the ingredients into a large bowl.
  4. Add cooled spinach mixture and whisk to combine.
  5. Pour into pie crust and bake for 30-35 minutes, or until puffed and set.
