Green Beans with Lime & Chives Recipe – Raleigh, Durham, North Carolina Food Photographer & Stylist

Our current favorite way to cook up green beans is with lime & chives, which we discovered via Heidi Swanson’s brilliant cookbook Super Natural Cooking. If you aren’t familiar with Heidi or her cookbooks and blog, 101 Cookbooks, you should take time to get acquainted with her cooking. Her recipes are inspired vegetarian dishes and utilize whole ingredients and healthful grains.

Green Beans with Lime & Chives, Adapted from Super Natural Cooking – Serves 4

3/4 pound string beans, trimmed
2 tbs extra-virgin olive oil
2 tbs water
Grated zest from 1 lemon
Grated zest from 1 lime
a handful of chopped fresh chives
a handful of parsley
sea salt & pepper, to taste

Slice green beans thinly at a diagonal. Saute them in olive oil for a few minutes. Add water to the saute pan and cover it, continue to cook beans for 2-3 minutes until their color is bright and they are tender. Remove from the stove and add in the zests of lime and lemon and half the chives. Season to taste, then garnish with the rest of the chives and the parsley. Drizzle a bit more olive oil over the top and serve.
