Mushroom Risotto, from Essentials of Classic Italian Cooking

When Ben and I went to Florence, Italy for our honeymoon we couldn’t wait to try to replicate the flavors at home. Though we didn’t have this dish it comes from the cookbook we bought to remind us of our trip, Essentials of Classic Italian Cooking. This meal is much more simple than the risotto I had a few weeks ago and next time I will modify the recipe to give it more flavor, probably substituting shallots for onions as well …
